Watermelon Salad with Fresh Mint and Feta

Ingredients

  • ½ large watermelon (about 5 cups cut in bite sized pieces)
  • 1 cup feta
  • 1/2 cup Fresh Mint, thinly sliced 
  • 1 lemon, zest and juice
  • 3-4 Tbsp olive oil
  • Salt to taste

Prepare

  • In a large bowl whisk together olive oil, lemon juice, lemon zest, and a pinch of salt. Add feta and mint and stir to mix everything together.
  • Add watermelon and stir gently to combine.
  • Serve immediately.

I love this salad as part of a super salad lunch—my favorites are a black bean and corn salad, some greens with fresh berries and nuts,this salad, plus my mom's healthy take on traditional chicken salad.
