Ingredients
- ½ large watermelon (about 5 cups cut in bite sized pieces)
- 1 cup feta
- 1/2 cup Fresh Mint, thinly sliced
- 1 lemon, zest and juice
- 3-4 Tbsp olive oil
- Salt to taste
Prepare
- In a large bowl whisk together olive oil, lemon juice, lemon zest, and a pinch of salt. Add feta and mint and stir to mix everything together.
- Add watermelon and stir gently to combine.
- Serve immediately.
I love this salad as part of a super salad lunch—my favorites are a black bean and corn salad, some greens with fresh berries and nuts,this salad, plus my mom's healthy take on traditional chicken salad.
