Eating foods that have cooling properties, as opposed to heating properties, is one of the main principles of Ayurveda. If you struggle with constantly feeling overheated (and who doesn't - it's August in Texas?!), your Pitta may be out of balance. Cooling foods, activities, scents and colors are the solution for living in an over heated world. If you're curious about Ayurveda - join us for a Detox & Yoga Retreat - you'll learn simple lifestyle tips to make your wellness a priority.

Ingredients

  • ½ large watermelon (about 5 cups cut in bite sized pieces)
  • 1 cup feta
  • Fresh Basil, thinly sliced
  • Fresh Mint, thinly sliced
  • 1 cup Jicama chopped
  • 1 Lime juiced

Prepare

  • Combine watermelon and jicama in a large bowl.
  • Add feta and mix.
  • Add fresh herbs.
  • Squeeze lime juice over top and gently toss.
  • Let chill for an hour and serve.

I love this salad as part of a "salad trio" - my favorites are a spring mix with fresh berries and walnuts, this salad plus my healthy take on traditional Chicken Salad. Here's that recipe.
