Watermelon Salad with Fresh Basil and Mint

  • ½ large watermelon (about 5 cups cut in bite sized pieces)
  • 1 cup feta
  • Fresh Basil, thinly sliced 
  • Fresh Mint, thinly sliced 
  • 1 cup Jicama chopped
  • 1 Lime juiced


  • Combine watermelon and jicama in a large bowl.
  • Add feta and mix.
  • Add fresh herbs.
  • Squeeze lime juice over top and gently toss.
  • Let chill for an hour and serve.

I love this salad as part of a "salad trio" - my favorites are a spring mix with fresh berries and walnuts, this salad plus my healthy take on traditional Chicken Salad. Here's that recipe.
