What is it about roasted gourds that make it feel like fall? I love all things orange- from pumpkin to a plethora of squashes. I could think of over a dozen delicious recipes such as risotto or ravioli that are made better with Butternut squash. This tasty butternut squash hummus recipe is another example. The addition of the perfectly roasted squash gives it a whipped and creamy texture that feels rich and tastes delicious. Perfect for snacking, spreading on a wrap or bringing to a fall gathering.
Ingredients
- 3 can chickpeas, rinsed and drained, warmed in boiling water
- 3-5 cloves garlic, minced
- 3/4 cup tahini
- 1/2c olive oil
- 3-4 lemon, juiced
- 1c water
- Salt to taste
- 1T cumin
- 1/2tsp cayenne
- 1 & 1/2c roasted butternut squash
Prepare
- Combine all the ingredients in batches in a food processor and mix until smooth. You may need to add a touch more water to get the consistency you want.
- Allow to process so its smooth and whipped.
