What's a retreat without a sweet treat? If you're looking for another fun way to use leftover bananas besides banana bread, you'll love this cake!
Ingredients
For the Cake
- 3 overripe bananas, mashed
- 1 cups sour cream or Greek yogurt
- 2 eggs
- 1 ½ cups sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour (not sifted)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- A dash of salt
For the Topping
- 4 oz. cream cheese (½ a block), at room temperature
- 1 ½ cup powdered sugar
- 2 Tbs. heavy cream or half-and-half
- 1 tsp vanilla extract
- 1 cup toasted pecans
Prepare
Cake
- Preheat oven to 350 F
- In a large bowl, mix bananas, sour cream, eggs, sugar and vanilla.
- In a medium bowl, mix flour, baking soda, baking powder, salt and cinnamon.
- Gently fold the dry ingredients into the banana mixture.
- Pour into cake pan and tap on counter to remove big air bubbles.
- Bake until a toothpick inserted in middle comes out clean.
Topping
- Mix cream cheese and powdered sugar with a fork until smooth.
- Then add cream and vanilla and stir well.
- It should be thick but pourable (add a little extra dash of cream if you need it).
- Pour over cooled cake and top with toasted (or candied) pecans.
