Delightful Banana Cake

What's a retreat without a sweet treat? If you're looking for another fun way to use leftover bananas besides banana bread, you'll love this cake!

Ingredients

For the Cake

  • 3 overripe bananas, mashed
  • 1 cups sour cream or Greek yogurt
  • 2 eggs
  • 1 ½ cups sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour (not sifted)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • A dash of salt

For the Topping

  • 4 oz. cream cheese (½ a block), at room temperature
  • 1 ½ cup powdered sugar
  • 2 Tbs. heavy cream or half-and-half
  • 1 tsp vanilla extract
  • 1 cup toasted pecans

Prepare

Cake

  • Preheat oven to 350 F
  • In a large bowl, mix bananas, sour cream, eggs, sugar and vanilla.
  • In a medium bowl, mix flour, baking soda, baking powder, salt and cinnamon. 
  • Gently fold the dry ingredients into the banana mixture.
  • Pour into cake pan and tap on counter to remove big air bubbles.
  • Bake until a toothpick inserted in middle comes out clean.

Topping

  • Mix cream cheese and powdered sugar with a fork until smooth. 
  • Then add cream and vanilla and stir well. 
  • It should be thick but pourable (add a little extra dash of cream if you need it). 
  • Pour over cooled cake and top with toasted (or candied) pecans.
