Chocolate Avocado Mousse

You might be skeptical about a chocolate mousse made with avocados. Trust me—I was suspicious of combining avocados with chocolate at first. But there's something about the avocado that gives this mousse a richness that's hard to describe.

Plus avocados are undeniably healthy! A great source of unsaturated fat, plus full of fiber and Vitamins C, K and E.

really enjoy this plant-based, vegan dessert and I hope you do too!

Ingredients

  • 3 ripe avocados 
  • 1/2c almond milk/coconut milk (unsweetened)
  • 3/4c honey 
  • 1tsp vanilla extract
  • 1/2c cocoa powder
  • 4oz dark chocolate*
  • Berries and roasted pecans, for serving

*If you're making this dairy-free, be sure to check the ingredients on your dark chocolate label.

Prepare

  • Melt chocolate over double boiler or in the microwave on low-power in 30 second increments.
  • Allow to cool slightly.
  • Blend all ingredients except melted chocolate with immersion blender until smooth.
  • Scrape down and add melted chocolate.
  • Continue to blend until creamy & silky smooth. 
  • Top with berries and roasted pecans and enjoy!
