The lowly chickpea (also known as a garbanzo bean to the uninitiated) can be substituted for meat in almost any dish. The beans are an excellent source of protein and fiber and are rich in vitamins and minerals. Chickpeas are mostly known as the main ingredient in hummus. We are world famous for the hummus we serve at the retreat! My favorites are the Carrot and the Lemon Basil. As our seasonal menus change, so does our flavor of hummus. You'll have to join us to discover your new favorite.

I came up with this recipe, as an addition to our menu, since we frequently have guests who are vegetarian or vegan. I'm definitely a meat eater, but I think this is amazing. And so do the guests.

  • 2 cans garbanzo beans
  • 1 can coconut milk
  • 2 cups raw spinach
  • 2 tbsp turmeric
  • 1 tbsp no salt seasoning
  • Salt and pepper to taste

  • Open and save 1⁄3 cup of bean juice
  • Put all ingredients and saved bean juice except spinach in pot
  • Bring to a boil
  • When it boils, let simmer and let reduce
  • After 15 minutes, add spinach
  • Add salt and pepper to taste
  • Reduce for another 30 min
