Stewed Chickpeas - Vegan

The lowly chickpea (also known as a garbanzo bean) can be substituted for meat in almost any dish. The beans are an excellent source of protein and fiber, and are rich in vitamins and minerals. Chickpeas are mostly known as the main ingredient in hummus, something we usually have waiting for guests when they arrive to check in! My favorites are the Simple Hummus and the Lemon Basil. As our seasonal menus change, so does our flavor of hummus. You'll have to join us to discover your new favorite.

We came up with this recipe, as an addition to our menu, since we frequently have guests who are vegetarian or vegan. I'm definitely a meat eater, but I think this is amazing. And so do the guests.

Ingredients

  • 2 cans garbanzo beans, rinsed and drained
  • 1 can coconut milk
  • 1⁄3 cup vegetable broth
  • 1 tsp turmeric
  • 1 tsp no salt seasoning
  • 1 tsp ginger
  • 1 can stewed tomatoes
  • Salt and pepper to taste 
  • 2 cups raw spinach or kale

Prepare

  • Put all ingredients except spinach or kale in sauce pot.
  • Bring to a boil, reduce to medium-low and let simmer for 15 minutes.
  • Add greens, tomatoes, salt and pepper.
  • Reduce for another 30 min, adding additional vegetable broth if desired.
