I have loved Spinach Artichoke dip for as long as I can remember. In a perfect world all of my dips would be all dips all of the time! Kaycee came up with this twist on the traditional dip - and I LOVE it. So yummy on slices of crusty bread, or go the traditional way with crackers, veggies or even pretzel chips.
This is a healthier take on the traditional recipe. You can also increase or decrease the jalapenos depending on your preference.
Ingredients
- 1 - 8 oz pkg low fat cream cheese, softened
- 1 c. Greek yogurt
- 2 c. fresh spinach, chopped
- 1 14oz can artichokes, drained & chopped
- ½ c. mild pickled jalapeños, diced (optional)
- 1 c. pepper jack cheese, shredded
- ¼ c. parmesan cheese, grated
- 4 fresh garlic cloves, crushed
- salt & pepper
Directions
- Preheat oven to 375.
- Mix all ingredients together until well blended
- Spoon into a baking dish. Bake until bubbly and lightly browned, about 30 minutes.
- Let cool 10 minutes before serving.
Enjoy the decadence! Life is too short for not enjoying an occasional indulgence.
