Jalapeno Spinach Artichoke Dip

I have loved Spinach Artichoke dip for as long as I can remember. In a perfect world all of my dips would be all dips all of the time! Kaycee came up with this twist on the traditional dip - and I LOVE it. So yummy on slices of crusty bread, or go the traditional way with crackers, veggies or even pretzel chips.

This is a healthier take on the traditional recipe. You can also increase or decrease the jalapenos depending on your preference.

Ingredients
  • 1 - 8 oz pkg low fat cream cheese, softened    
  • 1 c. Greek yogurt                                                                   
  • 2 c. fresh spinach, chopped                                                 
  • 1 14oz can artichokes, drained & chopped                      
  • ½ c. mild pickled jalapeños, diced (optional)                
  • 1 c. pepper jack cheese, shredded
  • ¼ c. parmesan cheese, grated
  • 4 fresh garlic cloves, crushed
  • salt & pepper
Directions
  • Preheat oven to 375.
  • Mix all ingredients together until well blended
  • Spoon into a baking dish. Bake until bubbly and lightly browned, about 30 minutes.
  • Let cool 10 minutes before serving.

 Enjoy the decadence! Life is too short for not enjoying an occasional indulgence.
