Mashed Sweet Potatoes

Sweet potatoes are one of my favorite things about Fall. What's not to love? They're packed with nutrients, support digestive health and are good for your immune system. Plus root vegetables are a crucial part of an Ayurveda diet, they promote grounding to balance out Vata, which is prevalent in the fall as dry and light energy.

The best part about this recipe is that you can use the leftovers to make Maple Sweet Potato Oatmeal in less than 15 minutes!

Ingredients

  • 6 medium sweet potatoes 
  • ¼ C orange juice (I prefer fresh squeezed for less sugar)
  • ½ cup coconut milk
  • 2 Tbsp butter
  • ½ tsp salt

Prepare

  • Wash and peel sweet potatoes and cut into medium chunks
  • Place in large pot and bring to boil
  • Cover and simmer for 30 minutes until potatoes are soft
  • Add milk, OJ, butter and salt
  • Use mixer or potato masher depending on the consistency you want
  • Taste and adjust salt or OJ as needed
  • Enjoy!
