I discovered this recipe in the Dallas Morning News in 2009. So simple yet so delicious when the various flavors come together. What I love most about this recipe is it's versatility. It's wonderful as a dip with multi-grain crackers, pita chips or even nice crusty bread. So delicious over pasta or scrambled eggs, or for the more adventurous eat it straight from the bowl! No judgement here. Guests love this recipe and when I've gone to a potluck in the past, this is ALWAYS requested.
Ingredients
- 2 cans diced tomatoes
- 3/4 cup feta cheese
- 2 cloves garlic - pressed
- 1/4 tsp red pepper or cayenne
- 1 tsp Italian seasonings
Directions
- Combine all ingredients in a baking dish
- Cook at 350 for 20 minutes
- Serve with the cracker of your choice
It may be tempting to microwave, but be forewarned - it won't taste as good! It needs the oven temp to meld the flavors together.
