Tex Mex Mini Crustless Quiche

Nothing beats a Sunday Brunch main dish for deliciousness and ease of preparation then these. You can keep the basic recipe the same - eggs, milk and cheese - and switch up the ingredients. Adding mushrooms and asparagus with an Italian blend cheese. Or even adding bacon, ham or sausage for a non-vegetarian option. Black beans are a nice addition too. These can also be made ahead and stored in the freezer for a quick breakfast during the week.

Ingredients

  • 12 Eggs
  • 1/4 Cup Milk
  • 2 TBS Butter, Melted
  • 1 Yellow Onion
  • 1 Cup Diced Bell Pepper (red, yellow, green or mix it up)
  • 1 Cups Spinach or Arugula
  • 1/2 Cup White Wine
  • 1/2 Cup Cheddar Cheese
  • Small can of Green Chilies

Prepare

  • Preheat oven to 350.
  • Saute bell peppers and onions in white wine and butter, then add greens.
  • Crack eggs into a large mixing bowl and add milk and butter. Stir all thoroughly, then lightly mix in veggies, greens and cheese.
  • Spray coconut oil on a cupcake pan and ladle mixture  into each cup evenly.
  • Bake 20- 25 minutes.
  • Let set five minutes before serving.

Serve with crusty bread and butter or even tortillas. A side of fresh fruit is the perfect finishing touch.Enjoy!
