Greek Yogurt Chicken Salad
A healthy take on a more traditional chicken salad.
Ingredients
- 2lb asparagus spears (thick are best)
- 2cloves garlic, minced
- Olive oil
- Lemon Juice or balsamic vinegar
- Salt and pepper
Prepare
- Cut stems off asparagus. If outer skin is thick, peel if desired.
- Toss with olive oil, lemon juice, garlic, salt and pepper until coated.
- Lay in a single layer on a sheet tray. Roast at 400 degrees for 10min or until fork tender.
