Peach Cobbler Oatmeal

Every summer, I look forward to enjoying Texas peaches. Whether it's on salads, with yogurt, from the grill, by themselves or in this delightful warm breakfast. This recipe is super easy and super delicious. If you like a less-sweet oatmeal, leave off the maple syrup – especially if the peaches are ripe and juicy. Enjoy it warm or cold - it's delicious either way!

Ingredients

  • 1 c rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp cardamom
  • pinch sea salt
  • 1 cup milk (or substitute coconut or almond mild for dairy free)
  • 2 cups water
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup golden raisins
  • 1/2 cup chopped pecans
  • 3-4 peaches - ripe to overripe - cut into pieces

Prepare

  • Bring water, milk and oats to boil.
  • Reduce heat and allow to simmer until liquid is absorbed.
  • Add rest of ingredients, except for peaches
  • Remove from heat and add peaches.
