If you know me, you know I hate to waste any food. That may explain why I have a freezer stuffed full of frozen bananas! I'm counting down the days until it's cool enough to make banana bread, but in the meantime I've been making this for Mason and I for a quick and delicious breakfast. I use mostly berries that i've frozen before they went bad - you could also try watermelon (I'd leave out the bananas) or peaches.
The best part of this recipe, Mason gets to help with pushing the buttons on the blender - which makes him very happy. A great way to start any day - with a moment of joy and a delicious smoothie.
Smoothie
- 2 Cups Frozen Fruit
- 2 Frozen Bananas
- 1/2 cup Greek Yogurt or Plant Based Yogurt (unsweetened)
- 1/2 inch of fresh ginger root (peeled)
- Blend all ingredients together until smooth.
Breakfast Bowl
- Use granola or steel cut oats as your base
- Top with smoothie
- Top with your choice of fresh coconut, pecans/walnuts/almonds, chia seeds or flax seeds, fresh fruit
- Better yet, all of the above
- Finish with a healthy sprinkle of cinnamon - so delicious and so many benefits.
There's really no need to add honey to your bowl as it's naturally sweet. Also, check the sugar content of your granola - most granolas are high in sugar. Homemade granola is a good option, but I'm not there yet. Enjoy!
