With the Summer Solstice just around the corner and rising temperatures already here, it’s time for our seasonal menu change! 

During the summer, or pitta season in Ayurveda – something we dive into at our Balance & Restore retreats – our bodies naturally crave lighter foods like fruit and salads while smaller meals allow our digestive fire to disperse and keep us cool. 

I am especially excited about our farm-fresh eggs, pasture-raised chicken, and organic produce from Red Moon Farms, an organic family farm and CSA that serves the Dallas, Tyler, and Longview areas. (At the time of publishing, they still have a few spots available for their Summer CSA, if you’re interested in joining.) 

What’s On the Menu

Here are some highlights of our Summer Retreat Menu:

  • Friday Evening: Sunshine Pasta dressed in a zesty extra virgin olive oil with lemon, roasted garlic, and herbs fresh from our garden. Served alongside roasted, pasture-raised chicken and a tomato basil salad.
  • Saturday Morning: Peach Cobbler Oatmeal made with fresh peaches and a touch of maple syrup.
  • Saturday Lunch: Build your own sweet or savory salad with toppings that include roasted chicken, fresh berries, sliced peaches, golden raisins, hard-boiled eggs, peppers, cucumbers, feta, roasted pecans, and house-made croutons.
  • Saturday Evening: Summer Salad Trio featuring our Greek Yogurt Chicken Salad, cool tomato-basil pasta salad, and fresh fruit salad with mint. Served with lightly toasted Roasted Garlic Rustic Bread from KC’s Kitchen.
  • Sunday Brunch: Farm-Fresh Eggs Scrambled with Pan Roasted Veggies and Cheese, served with Homemade Salsa and a Potato Hash.
